Restaurante Es Pes de Sa Palla in Spain's Palma de Mallorca, has a bigger initiative than any other restaurant we have visited in the past. The inception of the restaurant has been funded by Amadip Esment Fundació, a foundation with over 15 dedicated years to providing employment to people with intellectual disabilities. The foundation is a union of a remarkable story and a beautiful way of doing things. The story goes back to parents coming together to give more strength to a common goal: that their children with intellectual disabilities have a happy and full life. Amadip is the symbol of care and support to meet the needs of these individuals. With this foundation, the workers are mimed, cared for, attentive and supported to the full extent. 

Es Pes de Sa Palla was opened in 1996 and started as a coffee-shop, at the time it was a European pioneering initiative. Training, employment and occupation has been taken place at their own cooking school within the same square. The food has very well elaborated flavours and textures with a customer service so good, most venues should be envious. When in season, most of the vegetables consumed are from the Weyler farm, an organic farm also owned by the Amadip Esment Foundation.

With a combination of quality raw vegetables in a farm with more than 200,000 m2 of land devoted to local production, the menu is designed based on the season and the usual selections of market-picked fishes and meats. Craftsman products such as their wine, Gallinas & Focas is also a product of the foundation, it is made in collaboration with 4 Kilos Vinícola. Their refined olive oils are also a product of the foundation's farm. 

We went to savour the food in the terrace of the Restaurante Es Pes de Sa Palla on a warm Thursday afternoon. All of our dishes were beautifully presented and we were well looked after. The confit duck with orange slices was deliciously juicy and the sea food rice with squid, clams and shrimps was a game changer. We sadly didn't get a chance to visit the very next day as intended due to a hefty schedule whilst staying in Palma de Mallorca, but we most definitely intend to go back!
